Carbs

I gave up gluten and lost 30 pounds. That was over two years ago, and it's still off without any effort on my part. First time in my adult life that I have not had to fight to stay at a size 8. (I know that's huge for some of you, but it's skinny for me.) As an added bonus, no more arthritis in my fingers and knees. I did not substitute other grains for the gluten-filled kind. I do eat Ezekiel bread, and rice pasta (Tinkyada's our favorite), and organic potatoes and rice. I eat organic butter and cream and an avocado nearly every day and am convinced that eating fat will not make you fat any more than the cholesterol in eggs will raise the cholesterol in your blood (for most folks). Giving up gluten meant giving up nearly all processed, packaged and prepared foods. Inconvenient? You bet, but worth it. After all, we aren't born knowing how to approach the drive-though window at the fast-food joint; we needed to learn it. So, I decided to unlearn it.

My weakness is still sugar, though I eat far less of it than I used to. Your body processes simple carbs and alcohol as pure sugar. It's the drop after the spike that causes the craving for more. That's why it's preferable to eat some fat and/or protein with sugar/simple carbs. It slows the absorption and moderates the spike. That's why fat free snack foods are a disaster. They send your blood sugar sky high. Cutting back on sugar is hard, but if you can ignore the craving for about 72 hours, it will miraculously disappear. I swear.

Soappedaler, I just received Gary Taubes' new book from Amazon, and look forward to reading it.

Gluten is basically some nasty glue.....not even worth sniffing. Glad you're off it - my house is headed in that direction!! Thanks for this post!

My box of that stuff got pitched. I had to make room for the real thang. :D

Mine got shoved to the back of the cupboard. Just saw it the other day. Too lazy to pitch it then, but I'm gonna go do it right now!

The best book I ever read about eating food started with a simple tip... Eat food. As much as you want, when you want. Now you can put this book away.

Most of us are not eating real food. That's the problem. If the package has more then 5 ingredients its probably not real food. Our bodies don't have a clue how to assimilate most the junk we put in. So basically we wander through life hungry. Were hungry because we do not eat real food. We are deprived of all kinds of minerals and nutrients, etc. If we could ever learn to "eat food" again most of our weight and health issues would fade away. Just my 2 cents.

Amen.

It's amazing what diet can do - the right diet can do what many pharmaceuticals do OR BETTER - without the harmful side effects.

Towards the bottom/right of this site is a link to video presentations on "Side Effects: Death". There are three-four 45min. videos... very enlightening "whistle blowing" by Dr. Virapen based on his knowledge/experiences working at Eli Lily.

The thing is, I don't know what to eat for breakfast. When my cholesterol level went up this fall, my doctor asked me what I was eating. When I told him I was eating Cheerios with 1% milk and fruit for breakfast, he told me that was too many carbs. But what is the alternative? Eggs have too much cholesterol, and I can only eat EggBeaters for about two days before I feel like I'm gonna throw up.:idontno:

Doc told me to have no more than two teaspoons of fat a day. Wha-wha-what? Last night I broke down and we had angel hair pasta with low-fat sour cream, goat cheese, and basil. And a salad. I know that is probably wrong. But I am so confused about what is bad or good.

I mean, having grilled chicken and veggies or black beans and brown rice just doesn't do it for me as my permanent menu.

I have re-read the letter from the doc (he did his residency at Mayo in Rochester, so he sends me Mayo handouts), and I am still confused. Time for an appointment.

I alternate cheerios with skim milk, oatmeal with skim milk sweetnlow and cinnamon or a 150 calorie Atkins peanut butter crisp bar most days-sometimes I'll have an apple for bfast. Lunch of brown rice and lean meat with veggie or protein shakes or soup and brown rice. Dinner of 8 oz potato or rice with lean meat and veggies or high fiber pasta with homemade sauce with lean meat. Along with 1.5 hours of cardio/day brought my cholesterol down 50 pts in 6 months-no meds; I got a smiley face on my bloodwork that trip.

This was in my mailbox this morning. http://jonnybowdenblog.com/a-reversal-on-carbs/

Here's my recipe for homemade cereal. Couple of tablespoons flaxseed meal, couple of tablespoons hempseed, couple of Tablespoons chai seeds, sometimes some nuts on top sometimes some berries. Wet it with almond milk or Ocheesee cream on occasion.
Yesterday for breakfast I had some bacon cooked with kale. Sometimes you have to think out of the cereal box for breakfast if you have a problem with eggs. I have a food intolerance to them so should only eat them every 4 days.
I have no fear of fat if it's the right kind. My opinion of the right fat is omega 3's, olive and fat from grass feed beef and pastured pork and chicken, almost forgot extra virgin organic coconut oil.
My idea of fast food is a roasted publix chicken, just wish they would do the plain more often.
