Shrimp?

Sounds like you got them on the verge and letting them sit overnight never helps. Like SB said buy it the day you are going to use it unless it's frozen.

Also, I don't care what kind of shrimp it is, you can only freeze it once, if you freeze it again it's going to be mushy and gross when you thaw it again.
