Fantastic new cookbook
So finally I tried one of the recipes from one of my latest cookbook purchases--A Taste of Persia. Probably not new, just new to my collection.
A Taste of Persia: An Introduction ... - Google Books
Anyway, it was pistachio soup. How can one not try something with a name like that!
Ingredients were (don't remember amounts): ground unsalted pistachios, olive oil, leeks, garlic, shallots, rice flour, chicken broth, cumin, red and black pepper, lime juice and Seville orange juice.
You saute chopped onions till translucent, then add crushed garlic and saute till the onions start to brown; stir in flour; add chicken brothl bring to boil; add spices; simmer 45 minutes; add lime and onion juice; serve. Garnish with chopped pistachios.
It was delicious, though of course I couldn't stick to the recipe: added barely cooked pureed spinach to get my veggies in. And I didn't have any Seville oranges for the juice, so I drizzled blood-orange-essence-flavored olive oil as a garnish. Am not one to like mixing sweet tastes with savory dishes (sweet is for candy, dessert, and iced tea in my universe), but just the orange flavor without the sweetness was heavenly!
There are some beautiful rice recipes I want to try too, many colored with saffron.
The other soup I made yesterday for the week was a simple dilled tomato-chicken-vegetable soup. Sauteed onions and peppers in olive oil till they just start to burn a bit, add tomatoes, lots of dill weed and ground seed, chicken broth. Simmer till flavors meld; puree. Add leftovers from a roasted (Twin Oaks Farms) chicken and veggies, chopped into soup-sized bits; simmer 10 minutes; add a cup or two of frozen petit pois and enjoy.
Anybody else here like to cook for the week on Sundays? It's the only way I can manage eating decent meals on work days...

Even the trash pickup occurred today.......this never happens on a holiday in the City of Atlanta.......neva! Oooops, just the recycling has been picked up - not the regular household trash. Maybe they do take the day off. ;-)
