I know - there are more food sources on the web than one could ever begin to look at. but I am interested in finding some of the good ones. and they are already listed on this thread. but it never ends. truly.

I'd like to try to lemon poppy seed cake, too. Maybe we should have a bake off/taste off?

Oh crap. I forgot to post about the Poppy Seed Lemon Cake. I did not love the consistency of it...sorta too spongy for me. The flavor was good--but I would have liked more lemon. Loved the crunch from all the seeds. If I made it again, I would make a traditional Lemon cake and just add the same amount of poppy seeds. It was true to what the blog lady said though--not very sweet and quite different.

This is a favorite of mine. The World's Healthiest Foods If you scroll down toward the bottom of the page you will see "Over 100 Quick and Easy Recipes" You can design your search to an ingredient you have and would like a recipe for, or you can see a list of recipes based on Breakfast/Salad/Meat/Vegetarian...etc. I love that site.

Happy cooking. ;-)

:D I will be checking these out!! I am always looking for new recipes to keep the menu interesting at our house! My kids get bored of the same things week to week!!

Red Lentil Soup with Spinach and Lemon
adapted from Fresh Food Fast
Serves 4

1 1/2 cups red red lentils
1 cup canned chopped tomatoes, with their juice
3 tablespoons extra virgin olive oil
1 tablespoon minced garlic
2 teaspoons grated ginger
1 bay leaf
5 ounces baby spinach
2 tablespoons freshly squeezed lemon juice
In a large saucepan or soup pot over moderately high heat, saute garlic and ginger until aromatic, just a minute or two. Add lentils, bay leaf, tomatoes, and 4-5 cups water. Raise heat and bring to a boil; then reduce to a simmer and let cook until lentils are velvety soft and falling apart, about 15 minutes. Add spinach cook until wilted. Stir in lemon juice. Serve over hot, cooked whole grains or with bread. A dollop of Greek yogurt on top would be lovely.
