Aargh! I remember the first time I was served shrimp with the heads on...still makes me shudder! :eek: It was at a seafood place near the SS Alabama in Mobile. Not used to that....our shrimp here in the Midwest are all beheaded before they're served!
 
Yes, that stuff in a crustacean's head is very yummy. Too bad that it is absolutely loaded with the Big C (cholesterol). Shrimp are pretty good in that way without the heads, though. Those antennae always tickle my throat going down, anyway.

I love me some good head-on shrimp. You have not tasted flavorable shrimp until you've tried some fresh head-on shrimp.

:idontno: i can't stand those little beady black eyes staring back at me--yuck! the tails are pretty tasty though.
