Sounds so good. Share the recipe!! I made gnocchi once with my class when we read a story about it. We had the best cafeteria staff that helped us make anything. The children loved it!

Congrats!

Grazie!

It was simple. 1 pt. ricotta
1 c. freshly shredded parm
1 egg
1 c. flour (i used less in the dough and the rest of the 1c. to flour the board).

Mix egg into cheeses, add flour to get a rather sticky consistency. Take heaping tablespoons of dough and roll into finger size rolls. Cut with knife dipped in flour into 1 inch "pillows". Drop into boiling salt water. When they float, they're done! :D

Next time, I'll tackle the potato kind.

:clap:Don't know what I was afraid of. Easy Peasy!! Gnocchi turned out fab....like little pillows of cheesy air. Soup is done and ready for tonight. Sometimes I do amaze myself.
