Oven roasted sweet potato fries are one of my favorite treats! Add a little olive oil and cumin and salt and pepper. YUM and crisp and you won't miss the white potatoes
Oven-Baked Sweet Potato Fries - Country Living
(I bake mine longer than it says and also, I cut mine thinner as I like crispness to mine)
My Catholic friends and family say that each Sunday is like a small "Easter" and so you can have what you like on all Sundays prior to Easter. In fact, I just read this on WikiThe six Sundays in Lent are not counted among the forty days because each Sunday represents a "mini-Easter", a celebration of Jesus' victory over sin and death. So, you just have to get from Mon to Saturday and then go hog while on Sundays.
Good luck and TRY those sp fries!!

PS I have lots of tips. In other words, I'm full of it!!But I've been doing this for so long that I've learned a lot of "tricks" that realllllly help!
I have never heard of the Sunday thing - I guess we didn't get taught that in my catholic church growing up! so I'm going to pretend I didn't see that.... I don't think I want to have Sunday off - unless its totally necessary... but no, shouldn't have to.
I have made roasted sweet potatos - cut in chunks, add olive oil, chopped garlic, rosemary, sea salt and red pepper flakes. yummmm.....
I will do your oven sweet potato fries a lot over the next 40.
