I was just wondering. You hear so much about people who have absolutely shunned gluten from their lives. I'm starting to think I'm the only person who relishes the chewy delicious protein rich goodness found in high gluten products. I've been eating these Joseph's flat breads found at publix. These things are low calorie, low carbohydrate, loaded with protein, and delicious. I've even taken to taking pure gluten flour, mixing it with a little water, and pan frying some gluten balls. it's like meat, only a little stretchier. Are there any others who have refused to jump on the knee-jerk anti-gluten bandwagon? If so, let's hear about it.

I shun Michael Keaton movies.

I haven't shunned it, but moved to a lot less. It definitely helps as far as weight, but I'm not saying it cured my backaches, asthma etc.

LOCAL, the weight thing is the part I simply don't get. Gluten is almost like pure protein. It has zero carbs and not a lot of calories. Bread made with a higher concentration of gluten is going to have fewer calories than regular bread per weight. I don't know about gluten-free, but I would imagine it's all carbs, maybe some fiber, and practically zero protein. I think when a lot of people go gluten-free, they have less delicious food to choose from and so they eat less.
